- 2 small ripe bananas, mashed
- 4 large eggs
- 1/2 cup cottage cheese
- 2 tbsp maple syrup (optional)
- 2 tsp vanilla extract
- 2 1/2 cups almond flour
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 cup blueberries
- 2 tbsp chocolate chips (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large mixing bowl, combine the mashed bananas, eggs, cottage cheese, maple syrup (if using), and vanilla extract. Mix well until smooth.
- In another bowl, whisk together the almond flour, baking soda, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Gently fold in the blueberries, being careful not to overmix.
- Pour the batter into the prepared cake pan and sprinkle the chocolate chips on top.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Adjust sweetness by adding more or less maple syrup.
- Substitute blueberries with other berries if preferred.
