Instructions
- Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper or grease it lightly.
- In a blender or mixing bowl, combine the cottage cheese and eggs. Blend until smooth and frothy.
- Add almond flour, baking powder, and salt. Mix until just combined.
- Fold in optional herbs or spices if using.
- Pour batter into the loaf pan and smooth the top.
- Bake for 35–40 minutes, until golden and set in the middle.
- Cool slightly before slicing.
