Ingredients

  • 2 large eggs

  • 1 tsp pumpkin pie spice (or cinnamon, nutmeg, ginger blend)
  • 1 tsp vanilla extract
  • 12 tbsp honey or maple syrup
  • 1 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a blender, blend the cottage cheese until smooth—this will help create a nice texture.
  3. In a mixing bowl, whisk together the blended cottage cheese, eggs, pumpkin puree, vanilla, and honey until well combined.
  4. In another bowl, mix the almond flour, pumpkin spice, baking powder, and salt together.
  5. Gradually combine the wet and dry ingredients, stirring until just mixed—be careful not to overmix!
  6. Pour the batter into the prepared baking dish and spread it evenly.
  7. Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool before slicing into bars.
