- 1 cup cottage cheese
- 2 large eggs
- 1/2 cup almond flour (or oat flour for softer texture)
- 1/2 cup pumpkin puree
- 1 tsp pumpkin pie spice (or cinnamon, nutmeg, ginger blend)
- 1 tsp vanilla extract
- 1–2 tbsp honey or maple syrup
- 1 tsp baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a blender, blend the cottage cheese until smooth—this will help create a nice texture.
- In a mixing bowl, whisk together the blended cottage cheese, eggs, pumpkin puree, vanilla, and honey until well combined.
- In another bowl, mix the almond flour, pumpkin spice, baking powder, and salt together.
- Gradually combine the wet and dry ingredients, stirring until just mixed—be careful not to overmix!
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool before slicing into bars.
Notes
- Use oat flour for a softer texture.
- Adjust sweetness to taste by adding more honey or maple syrup if desired.
- Store in an airtight container for up to 3 days.
