A healthy and delicious casserole made with cottage cheese and spaghetti squash.

Ingredients

  • 1 medium spaghetti squash
  • 1 cup cottage cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut spaghetti squash in half lengthwise and scoop out seeds.
  3. Place squash halves cut-side down on a baking sheet and bake for 40 minutes.
  4. Let squash cool slightly, then scrape out strands with a fork.
  5. Mix squash strands with cottage cheese, Parmesan, egg, garlic powder, oregano, salt, and pepper.
  6. Transfer mixture to a baking dish and top with mozzarella.
  7. Bake for 20 minutes until cheese melts and turns golden.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • You can add cooked ground turkey or chicken for extra protein.
