  • ½ yellow onion, chopped
  • 1 cup cottage cheese
  • 4 skinless, boneless chicken breast halves
  • 2 tablespoons Cajun-style seasoning
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Squeeze excess water out of the thawed spinach. In a large bowl, mix the spinach with the chopped onion and cottage cheese, then set aside.
  3. Season the chicken breasts with Cajun-style seasoning. Place 1/4 of the cheese and spinach mixture in the center of each breast and fold them in half. Secure with toothpicks.
  4. Arrange the stuffed chicken breasts in a lightly greased 9×13 inch baking dish.
  5. Drizzle the melted butter over the chicken and bake for about 25 minutes, or until the chicken is cooked through and the juices run clear.
