Ingredients

  • 4 large bell peppers
  • 2 cups cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup spinach, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. In a bowl, combine cottage cheese, mozzarella, spinach, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Cut the tops off the bell peppers and remove the seeds. Fill each pepper with the cottage cheese mixture.
  4. Place the stuffed peppers in the baking dish and bake for 25–30 minutes until the peppers are tender and the cheese is bubbly.
