  • 1 tsp ground cinnamon
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a large mixing bowl, whisk together the cottage cheese, eggs, maple syrup, vanilla, and orange zest until well combined.
  3. Stir in the rolled oats, cinnamon, and baking powder.
  4. Gently fold in the diced apples and cranberries.
  5. Pour the mixture into the prepared baking dish.
  6. Bake for 40-45 minutes, until the top is golden brown and a knife inserted into the center comes out clean.
  7. Let cool for at least 15 minutes before serving.
