- 1/3 cup maple syrup

- 1 tbsp fresh orange zest (from about 1 large orange)
- 1 tsp ground cinnamon
- 1 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a large mixing bowl, whisk together the cottage cheese, eggs, maple syrup, vanilla, and orange zest until well combined.
- Stir in the rolled oats, cinnamon, and baking powder.
- Gently fold in the diced apples and cranberries.
- Pour the mixture into the prepared baking dish.
- Bake for 40-45 minutes, until the top is golden brown and a knife inserted into the center comes out clean.
- Let cool for at least 15 minutes before serving.
Notes
- For a smoother texture, blend the cottage cheese, eggs, maple syrup, vanilla, and orange zest first.
- Best served warm with a drizzle of extra maple syrup.
