- 1 cup full-fat (4%) cottage cheese
- 2 large eggs
- 1/3 cup maple syrup
- 1 tbsp orange zest
- 1 tsp vanilla extract
- 1 cup almond flour (or oat flour)
- 1.5 tsp baking powder
- 1/2 tsp ground ginger
- 1/2 cup fresh or frozen cranberries
- 1/2 cup white chocolate chips
- Optional Topping: Cream cheese frosting and extra dried cranberries
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
- Blend cottage cheese, eggs, maple syrup, orange zest, and vanilla until smooth.
- Whisk almond flour, baking powder, and ground ginger in a large bowl.
- Toss cranberries and white chocolate chips with 1 tbsp of flour mixture.
- Pour wet ingredients into dry ingredients and mix gently. Fold in flour-coated cranberries and chips.
- Spread batter evenly in the pan and bake for 25-30 minutes until golden brown.
- Cool completely before frosting or slicing.
Notes
- Use frozen cranberries if fresh are unavailable.
- Oat flour can substitute almond flour.
- Store leftovers in an airtight container for up to 3 days.
