  • 1 cup full-fat (4%) cottage cheese
  • 2 large eggs
  • 1/3 cup maple syrup
  • 1 tbsp orange zest
  • 1 tsp vanilla extract
  • 1 cup almond flour (or oat flour)
  • 1.5 tsp baking powder
  • 1/2 tsp ground ginger
  • 1/2 cup fresh or frozen cranberries
  • 1/2 cup white chocolate chips
  • Optional Topping: Cream cheese frosting and extra dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
  2. Blend cottage cheese, eggs, maple syrup, orange zest, and vanilla until smooth.
  3. Whisk almond flour, baking powder, and ground ginger in a large bowl.
  4. Toss cranberries and white chocolate chips with 1 tbsp of flour mixture.
  5. Pour wet ingredients into dry ingredients and mix gently. Fold in flour-coated cranberries and chips.
  6. Spread batter evenly in the pan and bake for 25-30 minutes until golden brown.
  7. Cool completely before frosting or slicing.

Notes

  • Use frozen cranberries if fresh are unavailable.
  • Oat flour can substitute almond flour.
