These muffins combine tart cranberries and bright orange zest with moist cottage cheese for a protein-packed breakfast favorite.

Ingredients

  • 1 cup cottage cheese (blended smooth)
  • 2 large eggs
  • 1 ½ cups almond flour
  • 1/2 cup fresh cranberries, chopped
  • 1 tbsp orange zest
  • 1/4 cup honey or maple syrup
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease 10 cups of a muffin tin.
  2. Blend the cottage cheese until smooth.
  3. Whisk blended cheese, eggs, honey, vanilla, and zest in a bowl.
  4. Stir in almond flour and baking powder.
  5. Fold in chopped cranberries.
  6. Fill cups 3/4 full. Bake for 22–25 minutes until golden and a toothpick comes out clean.
