- 1 cup cottage cheese (blended smooth)
- 2 large eggs
- 1 ½ cups almond flour
- 1/2 cup fresh cranberries, chopped
- 1 tbsp orange zest
- 1/4 cup honey or maple syrup
- 1 tsp baking powder
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease 10 cups of a muffin tin.
- Blend the cottage cheese until smooth.
- Whisk blended cheese, eggs, honey, vanilla, and zest in a bowl.
- Stir in almond flour and baking powder.
- Fold in chopped cranberries.
- Fill cups 3/4 full. Bake for 22–25 minutes until golden and a toothpick comes out clean.
Notes
- Blend cottage cheese first for even rising and no curd pockets.
