A refreshing and tangy cranberry orange juice mocktail with a hint of ginger, perfect for any occasion.

Ingredients

  • 1 cup plus 1 tablespoon sugar
  • 1 cup water
  • 1 inch piece of fresh ginger, cut into slices
  • 1 orange
  • 1 tablespoon sugar
  • 2 ounces cranberry juice
  • 1 ounce orange juice
  • 1 ounce aquafaba (liquid from a can of chickpeas)
  • 1 ounce ginger simple syrup
  • 23 ounces seltzer
  • 34 fresh cranberries (optional garnish)
  • 1 dried orange slice (optional garnish)

Instructions

  1. Make the simple syrup. Combine the sugar, water, and ginger slices in a small pot. Bring to a boil, lower the heat, and simmer for about 5 minutes. Turn off the heat and let sit to cool and infuse. When cool, strain out the ginger slices and store the syrup in an airtight container in the fridge for up to a month.
  2. Prep the orange. Zest the orange, then cut it in half. Squeeze the juice from one half of the orange and set aside. Cut the remaining half into wedges or slices. Mix about half the zest with the sugar on a plate, saving the remaining zest for another recipe or to make additional mocktails. Rub a slice of orange around the edge of your glass to wet the rim. Then, roll the rim in the orange flavored sugar.
  3. Make the mocktail. Pour the cranberry juice, orange juice, aquafaba, and simple syrup into a cocktail shaker without ice. Shake for a good 10 seconds. Add a scoop of ice and shake for another 10-15 seconds.
  4. Assemble your mocktail. Strain the mocktail into your prepped glass. When fully poured, slowly pour the seltzer over the foam down the back of the glass. If you feel like it, roll a few wet cranberries into the orange sugar, slide them onto a cocktail pick, and rest over the glass. Garnish with a fresh (or dried) slice of orange and a sprinkle of the orange sugar.
