- 1 pound ground beef
- 8 ounces cream cheese
- 1 cup cheddar cheese
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (4 ounces) green chilies
- 1 can (15 ounces) black beans, drained
- 1 can (15 ounces) corn, drained
- 1 can (14.5 ounces) diced tomatoes
- 1 packet taco seasoning
- 2 cups beef broth
- 1/2 cup sour cream
- 2 tablespoons cilantro (optional, for garnish)
Instructions
- Cook ground beef with onions and garlic in a pot over medium-high heat until browned, about 7-8 minutes.
- Add taco seasoning and stir well.
- Pour in diced tomatoes, green chilies, black beans, corn, and beef broth.
- Simmer uncovered for 15-20 minutes.
- Reduce heat and stir in cream cheese until melted.
- Add cheddar cheese and stir until smooth.
- Serve with sour cream and cilantro if desired.
Notes
- Use lean ground beef for less grease.
- Adjust taco seasoning to taste.
- Store leftovers in the fridge for up to 3 days.
