  • 1 can (15 ounces) black beans, drained
  • 1 can (15 ounces) corn, drained
  • 1 can (14.5 ounces) diced tomatoes
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1/2 cup sour cream
  • 2 tablespoons cilantro (optional, for garnish)

Instructions

  1. Cook ground beef with onions and garlic in a pot over medium-high heat until browned, about 7-8 minutes.
  2. Add taco seasoning and stir well.
  3. Pour in diced tomatoes, green chilies, black beans, corn, and beef broth.
  4. Simmer uncovered for 15-20 minutes.
  5. Reduce heat and stir in cream cheese until melted.
  6. Add cheddar cheese and stir until smooth.
  7. Serve with sour cream and cilantro if desired.
