Ingredients
1 cup cottage cheese
2 large eggs
1/3 cup steel-cut oats
1/2 tsp cinnamon
1 tsp vanilla extract
3 tbsp maple syrup
1/4 tsp baking powder
Pinch of salt
1 medium apple, peeled and finely chopped
Instructions
1. Preheat oven to 350°F.
2. Lightly butter a 1-quart baking dish.
3. Whisk cottage cheese, eggs, vanilla, and maple syrup until well combined.
4. Stir in the steel-cut oats, cinnamon, baking powder, and salt.
5. Fold in chopped apple.
6. Pour mixture into prepared baking dish.
7. Bake for 40-45 minutes until golden and set in the center.
8. Let cool for 5 minutes and serve.
Notes
Use full-fat cottage cheese for a creamier result.
Store leftovers in the fridge for up to 5 days.
Can be frozen in individual portions for later.
