Ingredients
4 large flour tortillas or spinach wraps
1 cup (250 g) cottage cheese, small curd
1 medium cucumber, thinly sliced or julienned
1/4 cup (40 g) finely chopped red bell pepper (optional)
1/4 cup (15 g) chopped fresh dill or parsley
Salt and pepper to taste
1 tbsp lemon juice or white vinegar
1/2 tsp garlic powder or 1 small minced garlic clove (optional)
Optional add-ins: baby spinach, shredded carrots, sliced avocado
Instructions
1. In a medium bowl, mix cottage cheese, dill or parsley, lemon juice, garlic powder, salt, and pepper.
2. Lay tortillas or wraps flat and spread cottage cheese mixture evenly.
3. Add cucumber slices and any optional add-ins.
4. Roll wraps tightly, tucking in the sides as you go.
5. Slice each wrap in half and serve immediately or wrap for later.
Notes
For best results, pat cucumbers dry to prevent sogginess.
Store filling separately for meal prep and assemble before eating.
