- 2 ripe bananas, mashed
- 3 medium eggs
- 1/2 cup cottage cheese (blended smooth)

- 1 tsp vanilla extract
- 2 cups almond flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 cup chocolate chips (plus extra for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a blender, combine cottage cheese, eggs, maple syrup, and vanilla extract. Blend until smooth, then mix in the mashed bananas.
- In a separate bowl, stir together the almond flour, cocoa powder, and baking soda. Gradually fold the dry ingredients into the wet mixture until just combined.
- Gently fold in the chocolate chips, reserving a few for the top.
- Pour the batter into the prepared loaf pan and sprinkle the extra chocolate chips on top.
- Bake for 45-50 minutes, or until a toothpick inserted comes out clean or with melted chocolate (but no wet batter).
Notes
- Use ripe bananas for natural sweetness.
