Ingredients

  • 2 ripe bananas, mashed
  • 3 medium eggs
  • 1/2 cup cottage cheese (blended smooth)
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 cup chocolate chips (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a blender, combine cottage cheese, eggs, maple syrup, and vanilla extract. Blend until smooth, then mix in the mashed bananas.
  3. In a separate bowl, stir together the almond flour, cocoa powder, and baking soda. Gradually fold the dry ingredients into the wet mixture until just combined.
  4. Gently fold in the chocolate chips, reserving a few for the top.
  5. Pour the batter into the prepared loaf pan and sprinkle the extra chocolate chips on top.
  6. Bake for 45-50 minutes, or until a toothpick inserted comes out clean or with melted chocolate (but no wet batter).
