- 2 large Eggs (flax egg for vegan alternative)
- 1 cup Cheese (cheddar or parmesan, vegan cheese optional)
- 4 slices Bacon (turkey bacon or omit for vegetarian)
- 1 medium Onion (shallots for milder taste)
- 2 tablespoons Fresh Herbs (thyme and chives, dried herbs work too)
- Salt, pepper, and optional garlic powder to taste
Instructions
- Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
- Roll out puff pastry on floured surface, cut into 4×6 inch rectangles.
- Combine eggs, cheese, bacon, onions, and seasonings in a bowl.
- Spoon filling onto one half of each pastry rectangle, leaving border.
- Fold other half over filling, crimp edges with fork.
- Brush tops with egg wash (whisked egg + water).
- Bake 18-22 minutes until golden brown.
- Cool 5 minutes before serving.
