Easy Cheeseburger Sliders

These easy cheeseburger sliders are the ultimate crowd-pleasing comfort food, baked with savory ground beef, melted cheese, and sweet Hawaiian rolls. Perfect for parties, weeknight dinners, or make-ahead meals.

Ingredients

1 medium yellow or red onion, halved and thinly sliced (about 2 cups)

6 ounces shredded medium cheddar cheese (about 1 1/2 cups)

3 teaspoons neutral oil, such as canola or vegetable, divided

1 pound lean ground beef

2 tablespoons prepared yellow mustard

2 teaspoons Worcestershire sauce

1/2 teaspoon garlic powder

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1 (12-ounce) package Hawaiian sweet rolls, such as King’s

8 slices American cheese

1/2 cup sliced dill pickles

1 tablespoon melted butter or olive oil

2 teaspoons white sesame seeds

1/2 cup mayonnaise

1/4 cup ketchup

2 tablespoons sweet pickle relish

1 to 2 tablespoons prepared yellow mustard

Kosher salt

Freshly ground black pepper

Instructions

1. Arrange a rack in the middle of the oven and preheat to 350°F.

2. Heat 2 teaspoons of the oil in a skillet over high heat. Add onions and cook until charred, about 4–6 minutes. Transfer to a plate.

3. Lower heat to medium-high. Add 1 teaspoon oil and ground beef to the pan. Cook, breaking up meat, for 5 minutes.

4. Stir in mustard, Worcestershire, garlic powder, salt, and pepper. Cook 2 more minutes until beef is deeply browned. Remove from heat.

5. Slice the Hawaiian rolls in half horizontally, keeping rolls intact. Place the bottom half in a baking dish.

6. Layer with American cheese, onions, beef mixture, shredded cheddar, and pickles.

7. Top with the other half of the rolls. Brush tops with melted butter or olive oil and sprinkle with sesame seeds.

8. Cover with foil and bake for 10 minutes. Uncover and bake 12–15 more minutes until golden and melted.

9. To make sauce: Mix mayo, ketchup, relish, and mustard in a small bowl. Season with salt and pepper to taste.

10. Serve sliders hot with burger sauce on the side.

Notes

You can prepare the sliders ahead of time and refrigerate them unbaked for up to 24 hours.

For extra heat, add jalapeños or substitute pepper jack for cheddar.

Store leftovers in an airtight container in the fridge for up to 3 days.
