- 1/2 cup almond flour
- 1/2 cup cocoa powder
- 1/2 cup maple syrup
- 2 large eggs
- 1 tsp instant espresso powder (dissolved in 1 tsp hot water if coarse, or added dry if fine)
- 1 tsp vanilla
- 1/2 cup dark chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 pan.
- Blend cottage cheese, eggs, maple syrup, espresso powder, and vanilla until smooth.
- Mix almond flour and cocoa powder in a separate bowl.
- Combine blended mixture with dry ingredients. Fold in chocolate chips.
- Pour batter into the pan and spread evenly.
- Bake for 25–30 minutes, or until a toothpick comes out mostly clean.

- Blend cottage cheese for a smoother texture.
- Adjust espresso powder to taste.
