Ingredients

  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 4 large eggs
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F (175°C) and grease a muffin tin with olive oil.
  2. In a mixing bowl, combine cottage cheese, spinach, feta, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Spoon the mixture evenly into the prepared muffin tin compartments and sprinkle mozzarella cheese on top.
  4. Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
