Ingredients

  • 2 medium apples, peeled and finely diced
  • 2 large eggs
  • 1 cup rolled oats (or oat flour)
  • 1/2 cup Greek yogurt or cottage cheese
  • 12 tbsp honey or maple syrup (optional)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, combine the diced apples, eggs, Greek yogurt (or cottage cheese), honey (or maple syrup), and vanilla extract. Mix until well combined.
  3. In another bowl, mix the rolled oats (or oat flour), baking powder, ground cinnamon, and salt.
  4. Gradually fold the dry mixture into the wet mixture, being careful not to overmix.
  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  6. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.
