Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the mashed bananas, blended cottage cheese, grated carrot, vanilla extract, and maple syrup. Mix until well combined.
  3. Stir in the oats, cinnamon, and baking powder until just incorporated.
  4. Gently fold in the chopped pecans.
  5. Pour the batter into the prepared loaf pan and spread it evenly.
  6. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
