Ingredients

  • 250 g cottage cheese
  • 3 large eggs
  • 3 tbsp honey or maple syrup
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • ½ cup almond flour (or oat flour)
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a round cake pan with a little oil.
  2. In a blender or food processor, combine the cottage cheese, eggs, honey (or maple syrup), lemon zest, and lemon juice. Blend until smooth.
  3. In a separate bowl, whisk together the almond flour and baking powder.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until everything is well combined.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  6. Bake in the preheated oven for 30–35 minutes, or until the cake is set and lightly golden. A toothpick inserted into the center should come out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
