Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tbsp granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1 1/4 cups buttermilk
  • 1/2 cup pumpkin purée
  • 1 large egg
  • 2 tbsp melted unsalted butter
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, whisk flour, sugar, baking powder, baking soda, pumpkin pie spice, and salt.
  2. In another bowl, whisk buttermilk, pumpkin, egg, melted butter, and vanilla.
  3. Add wet ingredients to dry and stir until just combined.
  4. Heat a lightly greased griddle over medium-low heat.
  5. Pour 1/4 cup of batter per pancake. Cook until bubbles form, flip, and cook until golden brown.
