Instructions
- Caramelize the onions: In a skillet, melt the butter over medium-low heat. Add the sliced onions and cook for 20–25 minutes, stirring occasionally, until they are deep golden brown and fragrant.
- Prepare the sauce: In a blender, combine the blended cottage cheese, beef broth, and dried thyme. Blend until the mixture is smooth and creamy.
- Assemble the casserole: Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the shredded chicken, caramelized onions, and the cottage cheese sauce. Mix until everything is well coated.
- Bake the casserole: Spread the mixture evenly in a baking dish. Top with the shredded Gruyere or Swiss cheese. Bake in the preheated oven for about 20 minutes, or until the cheese is bubbly and golden.
Notes
- Use pre-cooked chicken for faster prep.
- Gruyere cheese adds a nutty flavor, but Swiss works well too.
