Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a baking sheet or pizza stone.
- In a bowl, mix cottage cheese, almond flour, egg, salt, and black pepper until smooth and well combined.
- Spread the mixture evenly onto the prepared baking sheet, shaping it into a pizza crust. Bake for about 20 minutes, until set and lightly golden.
- Heat olive oil in a pan over medium heat. Sauté the garlic until fragrant, then add the chopped spinach and cook just until wilted.
- Spread the spinach mixture over the baked crust. Top with mozzarella, Parmesan, and Italian seasoning. Return to the oven and bake for another 10–15 minutes, until the cheese is melted and bubbly.
Notes
- For a firmer crust, drain excess liquid from the cottage cheese before mixing.
- Customize with extras like artichokes or olives for even more flavor.
