  • 2 tablespoons Dijon mustard
  • ⅓ cup apple cider vinegar
  • 1 teaspoon kosher salt

  • ¼ cup chopped fresh parsley

Instructions

  1. Cook the potatoes in salted boiling water for 10-15 minutes until tender. Drain and let cool. Cut into chunks.
  2. Fry the bacon until crispy. Remove and set aside.
  3. Sauté the onion and garlic in the bacon fat until softened.
  4. Whisk honey, mustard, salt, pepper, and vinegar into the skillet to make the dressing.
  5. Toss the dressing, potatoes, and bacon together gently.
