  • 2 pounds green beans
  • 2 tablespoons butter
  • 1 shallot, thinly sliced
  • 2 tablespoons all-purpose flour
  • 1/4 cup white wine
  • 3/4 cup whole milk
  • 1 cup vegetable broth
  • 2 teaspoons soy sauce
  • 1 garlic clove, grated
  • 1/2 cup shredded gruyere
  • 1 teaspoon salt
  • 1 cup crispy fried onions

Instructions

  1. Preheat the oven to 375 degrees.
  2. Bring a large pot of water to a boil.
  3. Working in two batches, blanch the green beans for 1-2 minutes until tender-crisp.
  4. Drain the green beans and transfer them to a casserole dish.
  5. Melt the butter in a saucepan over medium heat.
  6. Add the shallot and cook for a couple of minutes until tender.
  7. Whisk in the flour and cook until the mixture is golden brown.
  8. Slowly add the wine, broth, soy sauce, and milk, whisking after each addition.
  9. Simmer the sauce for a few minutes until thickened.
  10. Remove from heat and stir in the garlic, salt, and gruyere cheese.
  11. Pour the sauce over the green beans.
  12. Cover with foil and bake for 25 minutes.
  13. Uncover and bake for another 15 minutes.
  14. Toss the green beans to coat them in the sauce.
  15. Top with fried onions and bake for another 5 minutes.
  16. Let stand for 5-10 minutes before serving.
