  • ¼ cup vegetable oil
  • 1 cup granulated sugar
  • ⅓ cup brown sugar
  • ⅔ cup cocoa powder
  • 2 eggs, cold
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ cup all-purpose flour
  • 15 Oreos (plus 5 extra for topping)

Instructions

  1. Preheat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper and set aside.
  2. In a microwave-safe bowl, melt the butter, oil, and both sugars together in 30-second intervals, mixing in between. Microwave for another 1 minute and stir vigorously to fully melt the sugar. Use a hand mixer or stand mixer for best results.
  3. Whisk in the eggs one at a time, then add the vanilla. The batter should pull away from the bowl slightly.
  4. Fold in the flour, cocoa powder, and salt until just combined.
  5. Pour half the batter into the prepared pan and spread evenly.
  6. Place the Oreos in the center of the batter, then top with the remaining batter, spreading to cover.
  7. Sprinkle crushed Oreos on top and bake for 30 minutes.
  8. Let the brownies cool completely on a wire rack before slicing.
