- ⅔ cup butter
- ¼ cup vegetable oil
- 1 cup granulated sugar
- ⅓ cup brown sugar
- ⅔ cup cocoa powder
- 2 eggs, cold
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- ½ cup all-purpose flour
- 15 Oreos (plus 5 extra for topping)
Instructions
- Preheat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper and set aside.
- In a microwave-safe bowl, melt the butter, oil, and both sugars together in 30-second intervals, mixing in between. Microwave for another 1 minute and stir vigorously to fully melt the sugar. Use a hand mixer or stand mixer for best results.
- Whisk in the eggs one at a time, then add the vanilla. The batter should pull away from the bowl slightly.
- Fold in the flour, cocoa powder, and salt until just combined.
- Pour half the batter into the prepared pan and spread evenly.
- Place the Oreos in the center of the batter, then top with the remaining batter, spreading to cover.
- Sprinkle crushed Oreos on top and bake for 30 minutes.
- Let the brownies cool completely on a wire rack before slicing.
