  • 1 lb extra lean ground beef
  • 1 medium onion, coarsely chopped
  • 2 1/2 cups frozen mixed vegetables
  • 1 (14 1/2 ounce) can Italian-style diced tomatoes, undrained
  • 1 (12 ounce) jar beef gravy
  • 3 cups mashed potatoes
  • 1/4 cup grated parmesan cheese
  • 1 egg, slightly beaten

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook ground beef and onion until beef is browned and onion is soft. Drain excess fat.
  3. Stir in mixed vegetables, diced tomatoes, and beef gravy. Simmer for 5 minutes.
  4. Transfer the beef mixture to a baking dish.
  5. Spread mashed potatoes evenly over the beef mixture.
  6. Sprinkle with parmesan cheese and brush with beaten egg.
  7. Bake for 25-30 minutes or until the top is golden brown.
  8. Let cool slightly before serving.
