- 1 lb extra lean ground beef
- 1 medium onion, coarsely chopped
- 2 1/2 cups frozen mixed vegetables
- 1 (14 1/2 ounce) can Italian-style diced tomatoes, undrained
- 1 (12 ounce) jar beef gravy
- 3 cups mashed potatoes
- 1/4 cup grated parmesan cheese
- 1 egg, slightly beaten
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef and onion until beef is browned and onion is soft. Drain excess fat.
- Stir in mixed vegetables, diced tomatoes, and beef gravy. Simmer for 5 minutes.
- Transfer the beef mixture to a baking dish.
- Spread mashed potatoes evenly over the beef mixture.
- Sprinkle with parmesan cheese and brush with beaten egg.
- Bake for 25-30 minutes or until the top is golden brown.
- Let cool slightly before serving.

- Use leftover mashed potatoes to save time.
