- 1 cup (226g) 4% high protein cottage cheese
- 2 cups (305g) 60% dark chocolate chips
Instructions
- Preheat your oven to 350°F (177°C) and line two large baking sheets with parchment paper.
- Add the cottage cheese to a high-powered blender and blend until completely smooth.
- In a large microwave-safe mixing bowl, add the chocolate chips. Heat them in 15-30 second intervals, stirring with a spatula in between, until the chocolate is fully melted and smooth.
- Once the cottage cheese is smooth, add it to the melted chocolate. Stir with a spatula until fully combined.
- Using a 1.5 tbsp cookie scoop, quickly scoop the batter and release it onto the prepared baking sheets, spacing the cookies about 2 inches apart.
- Place one tray of cookies in the fridge for 15 minutes to firm up.
- Bake the cookies for about 15-17 minutes or until they are puffed up and have a crackly surface.
- Allow the cookies to cool completely on the baking sheet before removing them.
