Ingredients

  • 2 large eggs
  • ½ cup (150g) pumpkin puree
  • ⅓ cup pure maple syrup
  • ¼ cup coconut sugar
  • ½ cup melted coconut oil
  • 1 teaspoon vanilla extract
  • ⅔ cup oat flour
  • ¾ cup rolled oats
  • 1 tablespoon pumpkin pie spice
  • ½ teaspoon baking soda
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350ºF and line or grease an 8×8 pan with parchment paper.
  2. In a large mixing bowl, whisk together the eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla extract.
  3. Add in the oat flour, rolled oats, pumpkin pie spice, and baking soda. Mix the batter and gently fold in the chocolate chips.
  4. Pour the batter into the lined pan and sprinkle extra chocolate chips on top. Bake for 24–26 minutes, or until a toothpick comes out clean.
  5. Let the bars cool completely before cutting.

  • Use gluten-free oats if needed.
  • Store in an airtight container for up to 5 days.
