Easy and healthy pumpkin truffles made with pumpkin purée, oat flour, and dark chocolate. Perfect for a guilt-free treat.

Ingredients

  • ½ cup (122g) pumpkin purée
  • 1 ¼ tsp homemade pumpkin spice
  • ⅛ tsp salt
  • ¾ tsp liquid stevia
  • ¾ cup (90g) oat flour
  • ¼ cup (54g) roughly chopped dark chocolate
  • Optional: flaky sea salt

Instructions

  1. Line a baking tray with wax or parchment paper.
  2. Mix pumpkin purée, pumpkin spice, salt, and stevia in a bowl.
  3. Add oat flour and stir until combined.
  4. Roll mixture into 24 small balls and place on the tray.
  5. Melt dark chocolate in 30-second intervals, stirring between heats.
  6. Dip each truffle in chocolate, using forks to remove excess.
  7. Sprinkle with sea salt if desired.
  8. Freeze for 5–10 minutes or refrigerate for 15–20 minutes to set.

Notes

  • Use pure pumpkin purée, not pie mix.
  • Keep chocolate warm for smooth dipping.
  • Store truffles in the refrigerator.
