- ½ cup (122g) pumpkin purée
- 1 ¼ tsp homemade pumpkin spice
- ⅛ tsp salt
- ¾ tsp liquid stevia
- ¾ cup (90g) oat flour
- ¼ cup (54g) roughly chopped dark chocolate
- Optional: flaky sea salt
Instructions
- Line a baking tray with wax or parchment paper.
- Mix pumpkin purée, pumpkin spice, salt, and stevia in a bowl.
- Add oat flour and stir until combined.
- Roll mixture into 24 small balls and place on the tray.
- Melt dark chocolate in 30-second intervals, stirring between heats.
- Dip each truffle in chocolate, using forks to remove excess.
- Sprinkle with sea salt if desired.
- Freeze for 5–10 minutes or refrigerate for 15–20 minutes to set.
Notes
- Use pure pumpkin purée, not pie mix.
- Keep chocolate warm for smooth dipping.
- Store truffles in the refrigerator.
