Ingredients
Scale
- 1 cup unsweetened almond milk
- 1/2 cup cottage cheese
- 1/4 cup chia seeds
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- Fresh raspberries (for topping)
Instructions
- In a blender, combine the almond milk, cottage cheese, maple syrup, and vanilla extract. Blend until completely smooth.
- Pour the mixture into a jar or bowl, then gently stir in the chia seeds by hand.
- Allow the mixture to sit for 10 minutes, then give it another stir to prevent the seeds from sinking.
- Cover and refrigerate for at least 4 hours or overnight. The mousse will set into a creamy, cheesecake-like texture.
Notes
- Stir the mixture after 10 minutes to ensure even distribution of chia seeds.
- For a thicker texture, add more chia seeds.
- Top with fresh raspberries or other fruits before serving.
