Ingredients
1 cup full-fat cottage cheese
2 large eggs
1 cup rolled oats or oat flour
1.5 tsp baking powder
1/2 tsp salt
Optional: garlic powder, herbs, or shredded zucchini
Instructions
1. Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper.
2. Add cottage cheese, eggs, oats, baking powder, and salt to a blender.
3. Blend until smooth and thick.
4. Pour the batter into the loaf pan and smooth the top.
5. Bake for 35–40 minutes until golden and firm.
6. Cool completely in the pan, then remove and slice.
Notes
Let the bread cool completely before slicing for best texture.
Store in the fridge for up to 5 days or freeze individual slices.
Great with avocado, nut butter, or for making healthy sandwiches.
