Instructions
- Preheat your oven to 425°F (220°C).

- Arrange the peeled, sliced sweet potato rounds in a single layer.
- Brush both sides of the sweet potato slices with olive oil, then sprinkle evenly with salt, black pepper, and garlic powder.
- Roast the sweet potato rounds in the oven for 20-25 minutes, flipping halfway through, until fork-tender and golden brown.
- Remove from the oven and transfer to a serving platter.
- Sprinkle each round generously with crumbled feta and chopped fresh thyme.
- Drizzle honey evenly over the sweet potato bites.
- Serve warm or at room temperature.
