  • 2 Tbsp honey

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper or lightly grease it.
  3. Arrange the peeled, sliced sweet potato rounds in a single layer.
  4. Brush both sides of the sweet potato slices with olive oil, then sprinkle evenly with salt, black pepper, and garlic powder.
  5. Roast the sweet potato rounds in the oven for 20-25 minutes, flipping halfway through, until fork-tender and golden brown.
  6. Remove from the oven and transfer to a serving platter.
  7. Sprinkle each round generously with crumbled feta and chopped fresh thyme.
  8. Drizzle honey evenly over the sweet potato bites.
  9. Serve warm or at room temperature.
