- 4 boneless, skinless chicken breasts (6–8 oz each)
- 1/2 cup low-sodium chicken broth
- 2 tbsp olive oil
- 1 tsp kosher salt
- Season blend: 1/2 tsp onion powder, 1/2 tsp dried thyme, 1/2 tsp ground paprika, 1/4 tsp garlic powder, 1/4 tsp ground black pepper
Instructions
- Pour chicken broth into the bottom of your slow cooker.
- Mix salt, onion powder, thyme, paprika, pepper, and garlic powder in a small bowl.
- Pat chicken dry with paper towels.
- Coat chicken with olive oil and rub seasoning blend onto all sides.
- Place chicken in slow cooker in a single layer.
- Cook on LOW for 2.5-3.5 hours or HIGH for 1.5-2.5 hours.
- Check internal temperature reaches 165°F.
- Let chicken rest 5-10 minutes before slicing or shredding.
- Use cooking liquid as a light sauce.
