Ingredients
2 cups low-fat cottage cheese
2 medium apples, peeled and diced
2 eggs
1/4 cup almond flour
2 tablespoons maple syrup or sugar-free sweetener
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and lightly grease a small baking dish.
2. In a bowl, mix cottage cheese, eggs, almond flour, sweetener, cinnamon, vanilla, and salt until well combined.
3. Fold in diced apples, then pour mixture into the prepared baking dish.
4. Bake for 25–30 minutes, or until set and lightly golden on top.
5. Let cool slightly before serving warm.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days.
Reheat gently in the microwave or enjoy cold for a firmer texture.
Top with whipped cream or chopped nuts for added flavor.
