Ingredients
1 large egg (room temperature)
1/4 cup cottage cheese (4% milk fat recommended)
1/2 cup shredded cheddar cheese
1/4 cup coconut flour
1/2 tablespoon baking powder
1/8 teaspoon salt
3 teaspoons butter (divided) or avocado/olive oil spray
Instructions
1. Preheat air fryer to 180°C. Add 1 tsp butter to each ramekin and heat for 3 minutes.
2. Blend egg and cottage cheese in a food processor until smooth.
3. Add cheddar cheese, coconut flour, baking powder, and salt. Blend until dough forms.
4. Scoop dough into 3 even mounds using 1/3 cup measure.
5. Place dough in ramekins and air fry for 10 minutes until golden brown.
6. Cool 5–10 minutes. Add butter on top and reheat for 1–2 minutes to melt.
Notes
Use almond flour if allergic to coconut.
Let biscuits cool completely before storing.
Reheat in air fryer for best texture.
