Ingredients
1/2 cup small curds high protein cottage cheese, 4%
1 1/2 cups blanched superfine almond flour
2 tbsp unsweetened Dutch process cocoa powder
1/4 cup sugar-free sweetener
Instructions
1. Preheat your oven to 350°F (175°C) and grease a donut pan.
2. In a large bowl, mix cottage cheese, almond flour, cocoa powder, and sweetener until smooth.
3. Spoon the batter into the donut pan, filling each cavity about 3/4 full.
4. Bake for 15–18 minutes, or until the donuts spring back when lightly touched.
5. Let the donuts cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Notes
Use full-fat 4% cottage cheese for the best texture and richness.
To make it extra special, drizzle with sugar-free melted chocolate or dust with powdered monk fruit.
Store in the fridge for 4 days or freeze up to 2 months.
