- 3 large eggs (separated: yolks for richness, whites for lift)
- 1 cup cottage cheese (full-fat or low-fat, blended smooth)
- 1/4 teaspoon baking powder
- 1/4 teaspoon cream of tartar (optional, helps stabilize egg whites)
- 1/2 teaspoon cinnamon (divided)
- 2–3 tablespoons powdered erythritol or monk fruit sweetener (optional, essential for keto/low-carb sweetness)
Instructions
- Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper.
- In a medium bowl, separate the egg yolks from the whites into two clean, separate bowls. In the yolk bowl, add the cottage cheese, 1/4 teaspoon of cinnamon, and the sweetener (if using). Blend until smooth and creamy.
- In the bowl with the egg whites, add the cream of tartar (if using). Whip the egg whites until stiff peaks form.
- Gently fold the cottage cheese yolk mixture into the stiff egg whites. Be careful to keep the mixture airy.
- Spoon the mixture onto the baking sheet, forming 6 to 8 rounds. Sprinkle the remaining cinnamon and sweetener over the top for the swirl.
- Bake for 25–30 minutes, or until golden brown and set.
- Let cool completely before serving.
