Ingredients
Scale
- 1 box yellow cake mix
- 1 can (20 oz) crushed pineapple, undrained
- 3 large eggs
- 1/3 cup vegetable oil
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- Optional: 1/2 cup chopped pecans or walnuts
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large mixing bowl, combine the yellow cake mix, crushed pineapple (with juice), eggs, and vegetable oil. Stir until the batter is smooth and well combined.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake cools, prepare the frosting by beating the softened cream cheese in a medium bowl until smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until the frosting is creamy and spreadable.
- Once the cake has cooled completely, spread the cream cheese frosting on top. If desired, sprinkle with chopped pecans or walnuts for added texture.
Notes
- For a lighter frosting, you can use reduced-fat cream cheese.
- This cake stays moist for days if stored in an airtight container.
- Feel free to add a pinch of cinnamon or nutmeg for extra flavor.
