- 1/4 cup water or milk
Instructions
- In a medium bowl, mix together the cottage cheese, chia seeds, lemon zest, and your choice of water or milk until well combined.
- In a glass or a bowl, layer half of the blueberries on the bottom.
- Spoon the chia mixture over the blueberries, followed by the remaining blueberries on top.
- Cover and chill the parfait in the refrigerator for at least 2 hours to allow the chia seeds to expand and thicken the mixture.

- Adjust sweetness by adding honey or maple syrup if desired.
- For a creamier texture, use milk instead of water.
