Ingredients

  • 2 cups rolled oats
  • 2 large eggs
  • 1/3 cup honey
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tbsp poppy seeds
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a blender, combine the cottage cheese, eggs, honey, lemon juice, and lemon zest. Blend until smooth and creamy.
  3. In a large mixing bowl, combine the rolled oats, poppy seeds, and baking powder. Stir well to combine.
  4. Pour the wet mixture into the dry ingredients and mix until just combined.
  5. Spread the mixture evenly into the prepared pan.
  6. Bake for 35 minutes, or until golden and set in the center.
