Instructions
- In a large, microwave-safe mug, whisk the cottage cheese and egg until smooth.
- Whisk in melted butter, brown sugar, maple syrup, and vanilla.
- Stir in almond flour and baking powder until combined.
- Fold in 1 tbsp chopped pecans.
- Sprinkle remaining pecans on top.
- Microwave on high for 70-90 seconds until set. Cool briefly before eating.
