- 1 cup grated crisp apple
- 1/2 cup rolled oats
- 1/3 cup maple syrup
- 1/2 cup raisins
- 1/2 cup chopped pecans

- 1½ tsp ground cinnamon
- 1/2 tsp ground ginger
- 1 tsp baking powder
Instructions
- Preheat your oven to 175°C (350°F) and grease a 23×23 cm baking dish.
- Squeeze grated carrots and apple in a towel to remove excess liquid.
- Blend cottage cheese and eggs until smooth.
- Mix in oats, maple syrup, raisins, pecans, vanilla, spices, and baking powder.
- Fold in the squeezed carrot and apple mixture.
- Pour into the dish and bake for 40-45 minutes until golden and set.
- Cool for 15 minutes before slicing.

- Use fresh apples for best texture.
- Adjust sweetness by reducing maple syrup if preferred.
