Ingredients

  • 3 large eggs
  • 1 cup grated carrots
  • 1 cup grated crisp apple
  • 1/2 cup rolled oats
  • 1/3 cup maple syrup
  • 1/2 cup raisins
  • 1/2 cup chopped pecans
  • 1 tsp vanilla extract
  • 1½ tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 175°C (350°F) and grease a 23×23 cm baking dish.
  2. Squeeze grated carrots and apple in a towel to remove excess liquid.
  3. Blend cottage cheese and eggs until smooth.
  4. Mix in oats, maple syrup, raisins, pecans, vanilla, spices, and baking powder.
  5. Fold in the squeezed carrot and apple mixture.
  6. Pour into the dish and bake for 40-45 minutes until golden and set.
  7. Cool for 15 minutes before slicing.
