- 2 cups mushrooms, sliced
- 1 cup cottage cheese
- 1/2 cup Greek yogurt
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1/2 tsp thyme (or Italian seasoning)
- Salt & pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a small baking dish.
- In a skillet over medium heat, heat the olive oil. Add the sliced mushrooms and cook until they are browned and tender, about 5–7 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- In a bowl, mix together the cottage cheese, Greek yogurt, thyme, salt, and pepper until well combined.
- Gently fold in the mushroom mixture to the cheese blend.
- Transfer the mixture to the greased baking dish and spread it evenly.
- Top with the shredded mozzarella and grated parmesan cheese.
- Bake in the preheated oven for 20–25 minutes, or until bubbly and golden on top.
- Let the gratin rest for about 5 minutes before serving. For an extra touch, broil for 1–2 minutes at the end for a beautifully golden crust.
