Ingredients

  • 2 cups mushrooms, sliced
  • 1 cup cottage cheese
  • 1/2 cup Greek yogurt
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp thyme (or Italian seasoning)
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a small baking dish.
  2. In a skillet over medium heat, heat the olive oil. Add the sliced mushrooms and cook until they are browned and tender, about 5–7 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. In a bowl, mix together the cottage cheese, Greek yogurt, thyme, salt, and pepper until well combined.
  5. Gently fold in the mushroom mixture to the cheese blend.
  6. Transfer the mixture to the greased baking dish and spread it evenly.
  7. Top with the shredded mozzarella and grated parmesan cheese.
  8. Bake in the preheated oven for 20–25 minutes, or until bubbly and golden on top.
  9. Let the gratin rest for about 5 minutes before serving. For an extra touch, broil for 1–2 minutes at the end for a beautifully golden crust.
