Ingredients

  • 8 oz sliced mushrooms (Cremini or White)
  • 1 tsp olive oil
  • 1 ½ cups cottage cheese
  • 4 large eggs
  • ½ cup milk
  • 1 cup shredded Gruyere cheese (Swiss works too)
  • 1 tsp fresh thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium-high heat. Add the sliced mushrooms and sauté until golden brown, about 8-10 minutes.
  3. In a large bowl, whisk together the cottage cheese, eggs, milk, thyme, salt, and pepper.
  4. Stir the sautéed mushrooms into the egg mixture.
  5. Pour the mixture into a greased pie dish, then sprinkle Gruyere cheese on top.
  6. Bake for 40-45 minutes, or until the quiche is set and golden.
