- 8 oz sliced mushrooms (Cremini or White)
- 1 tsp olive oil
- 1 ½ cups cottage cheese
- 4 large eggs
- ½ cup milk
- 1 cup shredded Gruyere cheese (Swiss works too)
- 1 tsp fresh thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium-high heat. Add the sliced mushrooms and sauté until golden brown, about 8-10 minutes.
- In a large bowl, whisk together the cottage cheese, eggs, milk, thyme, salt, and pepper.
- Stir the sautéed mushrooms into the egg mixture.
- Pour the mixture into a greased pie dish, then sprinkle Gruyere cheese on top.
- Bake for 40-45 minutes, or until the quiche is set and golden.
Notes
- Use fresh thyme for best flavor.
- Let the quiche cool slightly before slicing.
