Ingredients
1 8oz block light cream cheese, softened
1/3 cup pumpkin puree
10 graham crackers, crushed finely
1/2 cup powdered sugar
2 tsp pumpkin pie spice
tiny pinch salt
1/2 tsp vanilla
2 cups white chocolate
1 tbsp coconut oil
extra crushed graham cracker for topping
Instructions
1. In a food processor, blend graham crackers into fine crumbs.
2. In a large bowl, mix cream cheese, pumpkin puree, crushed graham crackers, and powdered sugar.
3. Add pumpkin pie spice, salt, and vanilla. Stir until combined.
4. Freeze for 1 hour; if too soft, mix in two more crushed graham crackers.
5. Roll into about 20 balls and freeze for another 30 minutes.
6. Melt white chocolate and coconut oil in microwave in 30-second increments, stirring between each.
7. Coat each ball in white chocolate, top with extra graham cracker crumbs.
8. Store in refrigerator until ready to serve.
Notes
If mixture is too soft to roll, add more crushed graham crackers.
For variety, use dark or milk chocolate instead of white.
Keeps in refrigerator for 5 days; freezes well for up to 2 months.
