Ingredients

  • 2 cups rolled oats (divided: 1 cup ground into oat flour, 1 cup whole)
  • 1 ½ cups whole wheat flour
  • ¼ cup chia seeds
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 ½ cups milk (dairy or almond)
  • 1 large egg (optional)
  • 2 tbsp melted butter or olive oil
  • 2 tbsp honey

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a loaf pan.
  2. Mix milk, chia seeds, and 1 cup whole oats. Let sit for 10 minutes.
  3. Add egg, melted butter, and honey. Stir well.
  4. Fold in whole wheat flour, oat flour, baking powder, and salt. Do not overmix.
  5. Pour into the loaf pan. Bake for 45–50 minutes or until a toothpick comes out clean.

Notes

  • Optional egg improves binding.
  • Toast slices with butter or honey for serving.
