Ingredients

  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1 cup pumpkin purée
  • 1/2 cup maple syrup
  • 3 eggs
  • 1/3 cup melted coconut oil
  • 1 tsp vanilla
  • Optional: 1/2 cup chopped nuts

Instructions

  1. Preheat oven to 350°F. Line a loaf pan.
  2. Mix all wet ingredients in one bowl.
  3. Add dry ingredients and mix gently.
  4. Fold in nuts, if using.
  5. Pour into pan and bake 45–55 mins.
  6. Cool completely before slicing.
