- 2 cups oat flour
- 1 tsp baking soda
- 2 tsp pumpkin pie spice
- 1/2 tsp salt
- 1 cup pumpkin purée
- 1/2 cup maple syrup
- 3 eggs
- 1/3 cup melted coconut oil
- 1 tsp vanilla
- Optional: 1/2 cup chopped nuts
Instructions
- Preheat oven to 350°F. Line a loaf pan.
- Mix all wet ingredients in one bowl.
- Add dry ingredients and mix gently.
- Fold in nuts, if using.
- Pour into pan and bake 45–55 mins.
- Cool completely before slicing.
Notes
- Store in an airtight container for up to 3 days.
- For best texture, let the bread cool fully before slicing.
- Adjust sweetness by adding more or less maple syrup.
