This peach avocado salsa is fresh, colorful, and bursting with flavor—perfect for summer BBQs, tacos, or a light snack with chips.

Ingredients

2 medium ripe but still slightly firm peaches, diced

1 ripe but still slightly firm large avocado, diced

1 large ear corn, kernels cut off (about ¾ cup corn)

3 tablespoons finely diced red onion

1 jalapeño, seeded and diced

2 tablespoons finely diced cilantro

1 lime, juiced

Salt & freshly ground black pepper, to taste

Instructions

1. Place all ingredients in a medium bowl and mix to combine.

2. Garnish with extra cilantro.

3. Serve with multigrain tortilla chips, grilled chicken, shrimp, or fish tacos.

4. Enjoy immediately or refrigerate for up to 3 days.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days.

The lime juice will help the avocado retain its green color.

Double the recipe to serve a crowd of 8–10.
